Never heard of fish mint as well, and to think I love Thai cuisine. Are there any more herbs used in Thai cuisine? I'd love to know more and even learn to cook. Can't wait to try your recipes.

Perfect, thanks for putting me on to Rachels blog Im going to check it out. I am loving the Catalan food in Barcelona but its true you have to wade through the greasy chorizo and bad paellas first to find the real deal. Its amazing once you do. Im going to try those cod donuts for sure.

Its really a shame carp is such a difficult fish to come by in UK! It is, however, a big deal in Central/Eastern Europe, so you can get it almost everywhere. I love carp and I always request it whenever I come back to see my family.

The only disturbing thing is that it is usually sold alive from the massive fish tank so you need to kill it yourself (whats even worse, the poor fish is suffocating in the bag while you go home to do the dirty job :( )

Wow Cate, that is a great sounding recipe. And a useful tip about using the two bits of clingfilm, one to seal the marinade flavours into the chicken. I've filed that away for future use.

The meal sounds, and looks, good. The mix of chicken and chorizo is always good, but in a casserole dish like this the flavours must have been intense.

You will both love the street food in Saigon. Some truly amazing dishes especially bun noodles with BBQ pork is every where. The good thing is, it is all served in small portions so you can eat lots of other things and its so hot, you sweat it away! : )
